Chicken Penne Pasta
A rich, creamy pasta loaded with seasoned grilled chicken, sweet peppers, and plenty of flavor.
Ingredients
Pasta
* 2 cups penne pasta
* Water, for boiling
Sauce
* 2 tablespoons butter
* 3 garlic cloves, minced
* 2 mini sweet peppers (1 red, 1 yellow), diced
* ¼ cup yellow onion, diced
* 1 cup heavy cream
* ¼ cup shredded mozzarella cheese
* 1 ounce Velveeta cheese
* 1 tablespoon Creole seasoning
* ½ tablespoon dried parsley
* ½ tablespoon Italian seasoning
* 2 sprigs fresh thyme
* 1 teaspoon red pepper flakes (adjust to taste)
Chicken
* 2 chicken breasts (or 2–3 chicken thighs)
* Garlic powder
* Smoked paprika
* Onion powder
* Sea salt
* Black pepper
* 1 tablespoon oil, for searing
Instructions
1. Bring a pot of salted water to a boil and cook the penne pasta according to the package directions. Drain and set aside.
2. Season both sides of the chicken with garlic powder, smoked paprika, onion powder, sea salt, and black pepper. Heat oil in a skillet over medium-high heat and sear the chicken until golden brown and fully cooked, about 5–7 minutes per side depending on thickness. Let the chicken rest for a few minutes, then slice.
3. In the same skillet, melt the butter. Add the garlic, diced sweet peppers, and onion. Sauté for 3–4 minutes until softened and fragrant.
4. Pour in the heavy cream and stir. Add the mozzarella and Velveeta, stirring until the cheese is completely melted and the sauce is smooth.
5. Season the sauce with the Creole seasoning, parsley, Italian seasoning, fresh thyme, and red pepper flakes. Simmer for 2–3 minutes.
6. Add the cooked penne to the sauce and toss until every piece is coated.
7. Top with the sliced grilled chicken and garnish with additional parsley or Parmesan cheese if desired.
