🌿SEARED LEMON GARLIC BUTTER SCALLOPS 🌿

Ingredients:

2 tablespoons olive oil

1 ¼ pounds scallops

3 tablespoons unsalted butter, divided

4-5 cloves garlic, minced (or 1 ½ tablespoons minced garlic)

¼ teaspoon salt, to taste

¼ teaspoon ground black pepper, to taste

¼ cup broth

2 tablespoons lemon juice

¼ cup parsley, chopped

Instructions:

If scallops are frozen, thaw in cold water. Remove the side muscle if still attached. Thoroughly pat dry with paper towels.

Heat olive oil in a large skillet over medium-high heat until hot and sizzling.

Arrange scallops in a single layer without overcrowding the pan. Work in batches if needed.

Season scallops with salt and pepper. Sear for 2-3 minutes on one side until a golden crust forms, then flip and sear for another 2 minutes until crisp, lightly browned, and opaque. Remove scallops from the skillet and set aside.

Melt 2 tablespoons of butter in the same pan, scraping up any browned bits from the scallops. Add the minced garlic and cook for 1 minute until fragrant.

Pour in broth and bring to a simmer. Cook for 2 minutes, allowing the liquid to reduce by half. Stir in the remaining tablespoon of butter and lemon juice.

Remove the skillet from the heat. Return the scallops to the pan, gently tossing them to warm through.

Garnish with chopped parsley and serve over rice, pasta, garlic bread, or steamed vegetables such as cauliflower, broccoli, or zucchini noodles.
