Let me tell yall!!!!! This recipe was a lot and it took a while, but it was so good!

This is a 3 layer Crumbly German Chocolate cake with a home made pecan and coconuts icing. 🧁

ingredients:

1 cup evaporated milk

1 cup brown sugar

½ cup butter

3 egg yolks

1 teaspoon vanilla extract

1 ⅓ cups flaked coconut

1 cup chopped pecans

How To:

(1) Combine evaporated milk, brown sugar, butter, egg yolks, and vanilla in a saucepan over medium heat. Cook, stirring constantly, at a low boil until mixture turns a light caramel color and thickens, about 10 minutes.

(2) Remove from heat and stir in coconut and pecans. Let cool to room temperature before spreading on cake.

Chocolate Cake Layers:

4 oz semi-sweet chocolate - finely chopped

1/4 cup Dutch-process cocoa powder

1/2 cup boiling water

2 cups all-purpose flour

3/4 teaspoon baking soda

12 tablespoons unsalted butter - softened

1 cup granulated sugar

3/4 cup light brown sugar - packed

3/4 teaspoon salt

4 large eggs

1 teaspoon vanilla extract

3/4 cup sour cream

(1) Adjust the oven rack to the middle position. Preheat oven to 350°F. Grease 2- 9 inch round cake pans, line with parchment paper, and then grease and flour the parchment paper and sides of the pans. Set aside.

(2) In a small bowl combine the flour, baking soda, and salt. Set aside

(3) In a second small bowl combine the cocoa powder and chopped chocolate. Add the boiling water to the bowl, cover the bowl and let sit for 5 minutes. After 5 minutes, whisk the chocolate mixture until smooth. Let the chocolate mixture cool to room temperature.

(4) Using a stand mixer fitted with a paddle attachment cream the butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each addition.

(5) Add the vanilla and beat on medium high speed until light and fluffy, about 1 minute. Scrape down the sides of the bowl.

(6) Add the chocolate mixture, and beat again (about 30-45 seconds). Scraping down the sides of the bowl so that everything is evenly combined

(7) With the mixer on low alternate adding the flour mixture and sour cream, starting and ending with the flour. (Flour, sour cream, flour, sour cream, flour). Then divide between the pans or add to a cooking pan.

(8) Bake for 30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
