Week 2 locking my meal prep in for summer 🔒

For reference, I’m 34, 132 and 5’5”.
My nutrition goals are 1800 calories, at least 150 g protein, and 25 g fiber.
My breakfast is the same as always:
-coffee:
> double espresso
> Javvy protein creamer
> fairlife milk
> fontana white chocolate sauce
-banana
-Oikos fusion
Lunches:
-adult luncheable + fruit
-chicken salad pack with bagged salad
Dinner:
-birria tacos with brown rice and refried beans
I also always keep a plethora of high protein and fiber snacks handy at all times to help me stay full and stay on track!

These meals are easy to prepare ahead and offer a balance of protein, fiber, and essential vitamins. Preparing birria tacos with brown rice and refried beans for dinner brings a satisfying, flavorful end to the day. The birria style adds richness while the brown rice and beans ensure I get complex carbs and fiber to keep me full. Alongside main meals, I stock up on high-protein, high-fiber snacks which have been crucial for curbing hunger between meals and maintaining my nutrition goals. Snacks containing dried fruit, reduced-fat cheeses, or protein-packed nut mixes are staples in my routine. Meal prepping not only saves time but helps reduce the temptation to stray from planned eating. Locking in these meals early in the week has boosted my consistency and confidence in reaching my summer health goals.
