You can truly make it your own! For the salmon, I usually opt for seasoned salmon bites, which cook quickly and absorb flavors beautifully. Roasting them alongside your veggies ensures everything is done around the same time. If you're a fan of grilling, a grilled salmon filet also works wonderfully and adds a lovely smoky char. Just make sure to adjust cooking times accordingly to keep the salmon moist and flaky. Now, let's talk about the potatoes. While mini potatoes roast up golden-brown and delicious, I often swap them out for roasted sweet potato for a different flavor profile and extra vitamins. Both options are fantastic for a healthy plate! Just chop them into even, bite-sized pieces so they cook consistently.
