Baked Sausage, Arugula & Gnocchi Dinner 🍽️🔥 (Crispy, cozy, and SO easy!)
If you need a quick weeknight dinner that tastes restaurant-quality but only uses ONE dish… this is it 👏
✨ Ingredients:
• 2 tablespoons minced garlic cloves
• 1 (35.2-ounce) package shelf-stable potato gnocchi • 2 teaspoons of oregano
• 1/3 cup extra-virgin olive oil
• 1 teaspoon salt
• 1 teaspoon crushed red pepper flakes
• 1/2 teaspoon freshly ground black pepper
• 1 pound of Italian sausage, casing removed and crumbled into 1-inch pieces
• 5 ounces fresh arugula
• Finely grated Parmesan cheese (optional, for topping)
👩🍳 Instructions:
1️⃣ Preheat your oven to 400°F.
2️⃣ In a baking dish, combine:
• 2 tablespoons minced garlic
• Package of potato gnocchi
• 1/3 cup extra-virgin olive oil • 2 teaspoons of Oregano
• 1 teaspoon salt
• 1 teaspoon crushed red pepper flakes
• 1/2 teaspoon black pepper
Toss everything together until evenly coated in oil.
3️⃣ Create an open space on one side of the baking sheet. Add Italian sausage (casings removed), crumbled into 1-inch pieces in that space
4️⃣ Bake for 35–40 minutes, tossing halfway through to re-coat everything in the oil. Cook until the sausage is browned and the gnocchi is golden and crispy on the outside.
5️⃣ Remove from the oven and immediately add 5 ounces of arugula. Toss gently and let the residual heat wilt the arugula for about 5 minutes.
6️⃣ Finish with finely grated Parmesan cheese if desired.
