Peruvian chicken with asparagus

Very easy dinner idea.

I got Peruvian chicken pre-marinated.

Took it out of the packaging, poked some holes in it and air fried it at 370 degrees for 20 minutes.

While that was cooking, I washed and cut the asparagus. Then drizzled them with olive oil, salt, pepper, garlic powder, and onion powder. Mixed that all together and popped it in the oven at 425 degrees for 10 minutes.

Then I added cilantro, a piece of garlic, lemon juice, yogurt, garlic powder, onion powder, and pepper flakes to a blender and created the sauce.

Everything finished around the same time and it was very easy and delicious.

Using pre-marinated Peruvian chicken saves time and adds authentic, vibrant spices that complement the tender asparagus perfectly. The air fryer method for the chicken is a game-changer, giving it a crispy exterior while keeping the inside juicy, all in just 20 minutes at 370 degrees Fahrenheit. While the chicken cooks, preparing the asparagus is straightforward and healthy. Tossing asparagus spears with olive oil along with garlic powder, onion powder, salt, and pepper enhances their natural earthy flavor. Roasting them in the oven at 425 degrees for 10 minutes ensures they stay bright and crisp-tender, adding a nice texture contrast to the succulent chicken. The homemade cilantro yogurt sauce is a refreshing finishing touch. Blending ingredients like fresh cilantro, garlic, lemon juice, plain yogurt, and spices produces a creamy, zesty sauce that perfectly balances the smoky, spicy notes of the chicken and the savory asparagus. This sauce also adds moisture, making every bite flavorful. For those interested in variations, you can customize the spice level of the chicken by adding more pepper flakes or a pinch of cayenne. Additionally, swapping yogurt for sour cream or adding fresh lime instead of lemon juice can subtly change the sauce’s profile. To make this meal even more filling, consider serving it with a side of quinoa, rice, or corn, which pair nicely with the Peruvian flavors. This recipe is not only approachable for cooking novices but also a delightful way to incorporate more veggies into your dinner. Plus, using simple kitchen appliances like an air fryer and oven means minimal cleanup. Whether you're meal prepping or looking for a quick weeknight recipe, Peruvian chicken with asparagus and cilantro yogurt sauce offers a perfect blend of convenience and taste.
