Asparagus Stuffed Chicken Breast 🐔🥗🌿
Ingredients 🛒
4 boneless, skinless chicken breasts
12 asparagus spears, trimmed
1/2 cup sun-dried tomatoes, julienned
1 cup shredded mozzarella cheese
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp paprika
Salt and freshly cracked black pepper to taste
2 tbsp olive oil
Fresh basil leaves (optional, for garnish)
Directions 👩🍳
1️⃣ Prepare the chicken:
Preheat oven to 375°F (190°C).
Using a sharp knife, cut a pocket lengthwise into each chicken breast without slicing all the way through.
2️⃣ Season the chicken:
Season both sides of the chicken breasts with Italian seasoning, garlic powder, paprika, salt, and pepper.
3️⃣ Stuff the chicken:
Place 3 asparagus spears and a few sun-dried tomato strips into each pocket. Stuff with mozzarella cheese, then secure the edges with toothpicks to hold the filling in place.
4️⃣ Sear the chicken:
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes per side, until golden brown.
5️⃣ Bake:
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
6️⃣ Serve:
Remove toothpicks and garnish with fresh basil. Serve hot with your choice of side dishes like roasted vegetables or a crisp salad.
