made this on a whim and it came out BOMB! 1 serving of the elote corn is approx 168 calories & 14g of protein! the pulled pork alone is about 110 calories for 3oz - total cals for the quesadilla: 265 calories & 27g protein:) if you like the crispy onions like me, serving size is 40 calories🧅sometimes last minute dinners are the best ones🫶🏼
