Broccoli cheddar chicken & rice casserole
Here’s how to whip it up:
1. Prep the Broccoli: Steam broccoli in a skillet with butter, pink salt, pepper, and chicken bouillon for 3–5 minutes until tender. Remove and set aside.
2. Season the Chicken: Coat your chicken breasts with onion powder, garlic powder, Tony’s Creole seasoning, paprika, parsley, and any chicken seasoning you love.
3. Air Fry: Air fry the chicken at 400°F for 20 minutes.
4. Chop: Once cooked, chop the chicken into bite-sized pieces.
5. Make the Sauce: In a skillet, sauté chopped onions in butter. Add garlic powder, onion powder, Tony’s, and paprika. Stir in 1 can of cream of chicken soup and 1 can of evaporated milk (or whipping cream). Let it simmer until thickened.
6. Combine: Mix the cooked chicken, broccoli, and cooked rice into the sauce.
7. Assemble & Bake: Transfer the mixture to a baking pan and top generously with shredded sharp and Mexican blend cheeses.
8. Finish: Bake at 375°F for 10–15 minutes until the cheese is melted, bubbly, and golden.
