💕Ingredients
✨Base:
✨2 large sweet potatoes (air fryer friendly)
✨Meat & Seasonings:
✨Ground meat (turkey or beef)
✨Taco seasoning
✨Sazón seasoning
✨Salt and pepper to taste
💕Toppings & Fillings:
✨Corn
✨Pico de gallo (diced tomatoes, onions, cilantro)
✨Shredded cheese
✨Sour cream
✨Hot sauce (optional drizzle)
✨Parsley or cilantro for garnish
💕Instructions
1. Prep & Cook the Sweet Potatoes:
Wash and dry the sweet potatoes, then poke a few holes in them with a fork.
Air fry them at 390°F (200°C) for about 40–50 minutes (depending on size) until tender all the way through.
2. Brown the Meat:
While the sweet potatoes cook, heat a skillet over medium-high heat. Add your ground meat and cook until fully browned, breaking it apart with a spatula. Drain any excess fat.
3. Season the Meat:
Stir in your taco seasoning, Sazón, and any extra salt or pepper with a splash of water. Let it simmer for 3–5 minutes until rich and flavorful.
4. Assemble the Tacos:
Once the sweet potatoes are done, slice them open down the center and gently fluff the insides.
Spoon the seasoned meat generously into each potato.
5. Load the Toppings:
Layer on your corn, pico de gallo, and a heavy handful of shredded cheese so it gets nice and melty.
Top with a dollop of sour cream, a drizzle of hot sauce, and a sprinkle of dried parsley. Enjoy!
