Creamy and cheesy is everything you’re getting here with these INSANELY delicious, Cream Cheese Chicken Enchiladas! 🧀
I actually do want to call them my KC Cream Cheese Chicken Enchiladas, thanks to our good friends who live in Kansas City! Our friends introduced us to their version of Mexican food, and this was one of their favorite things to get. 🫕
To be honest, when I heard it was a cream cheese chicken enchilada I was a little nervous, being a Southern California native, we do not use cream cheese in our enchiladas! But, after I tried the enchiladas I was obsessed, and I had to find a way to make them at home! 🍅
Well, after doing some playing around and research, I believe I got the flavors down perfectly! 🥑
Now, tell me if you’ve ever had cream cheese chicken enchiladas before! 😋
Ingredients 🛒
• 2 cups cooked chicken
• 1.5 cups Monterey Jack cheese, shredded (plus extra for topping)
• 6 large flour tortillas
• 1 avocado, sliced
• 2 tbsp unsalted butter
• 2 tbsp flour
• 2 cups chicken broth
• 8 oz cream cheese, softened
• 1/2 cup sour cream
• 1/2 cup heavy cream
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp cumin
• 1/2 tsp chili powder
• Salt and pepper, to taste
Directions ✍️
• In a large pan, melt the butter over medium heat.
• Whisk in the flour and cook for 1-2 minutes to create a roux.
• Gradually whisk in the chicken broth until smooth and slightly thickened.
• Reduce heat to low, then whisk in the cream cheese, sour cream, and heavy cream.
• Add garlic powder, onion powder, cumin, chili powder, and salt and pepper.
• Stir until the sauce is smooth and creamy. Set aside.
• Preheat your oven to 350F.
• In a mixing bowl, combine the chicken and cheese.
• Divide the chicken and cheese mixture evenly among the tortillas. Roll each tortilla tightly and place seam-side down in a greased 9x13-inch baking dish.
• Pour the cream cheese sauce over the enchiladas.
• Sprinkle additional cheese on top.
• Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly.
• Serve with sliced avocado, chopped cilantro, and a side of rice and beans. Enjoy!
