Ingredients 🛒
• 1 3/4 cups all-purpose flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1/2 tsp ground cinnamon
• 1/2 cup granulated sugar
• 1/3 cup avocado oil
• 2 eggs, room temperature
• 1 tsp vanilla extract
• 3/4 cup whole milk
• 1.5 cups fresh peaches, diced
• 2 tbsp turbinado sugar
Directions ✍️
• Preheat oven to 375F. Line a 12-cup muffin tin with paper liners.
• In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and sugar.
• In a large bowl, whisk eggs, oil, vanilla, and milk until smooth and combined.
• Add dry ingredients into wet, gently folding until just combined.
• Gently fold in the diced peaches.
• Divide batter evenly among muffin cups (about 3/4 full). Sprinkle tops with turbinado sugar.
• Bake for 18–22 minutes, until tops are golden, and a toothpick comes out clean.
• Let muffins cool in pan for 5 minutes, then transfer to a wire rack to cool.
