Ingredients:
• 2 ripe bananas, mashed
• 2 cups rolled oats
• 2–3 tbsp honey (or maple syrup)
• 2 large eggs
• 1/2 cup milk (dairy or plant-based)
• 1 tsp vanilla extract
• 1 tsp baking powder
• 1/2 tsp cinnamon
• Pinch of salt
Optional Add-ins:
• 1/4 cup chopped nuts (walnuts/almonds)
• 2 tbsp chia seeds or flax seeds
• 1/4 cup dark chocolate chips
Instructions:
1. Preheat Oven
Preheat oven to 180°C (350°F). Grease or line a baking dish.
2. Mix Wet Ingredients
In a bowl, mash bananas. Add eggs, milk, honey, and vanilla. Mix well.
3. Add Dry Ingredients
Stir in oats, baking powder, cinnamon, and salt. Mix until fully combined.
4. Rest Mixture (Important)
Let the mixture sit for 5–10 minutes so oats absorb moisture.
5. Bake
Pour into baking dish and spread evenly. Bake for 25–30 minutes until golden and set.
6. Cool & Slice
Let cool completely, then cut into 9 even squares.
