Banana Cookies.
This is pretty easy and tasty. Not gonna be your favorite cookie, but it's better than you'd think.
I recently tried baking these banana cookies and was pleasantly surprised by how simple and tasty they turned out. Using two medium ripe bananas really adds natural sweetness and moisture, making the cookies soft and flavorful without needing much sugar. The recipe calls for 1½ cups of all-purpose flour, half a cup of sugar, melted butter, and baking soda which helps the cookies rise nicely. One thing I appreciated was the option to add chopped walnuts. They provide a nice crunch and a slightly nutty flavor that enhances the overall experience. If you like a softer bite, you can skip the walnuts and still enjoy a delightful texture. When mixing the ingredients, be sure to combine the flour, mashed bananas, sugar, melted butter, walnuts (if using), egg, baking soda, and a pinch of salt thoroughly. This helps achieve a consistent batter ready for baking. I recommend using parchment paper on your baking sheet as it prevents sticking and makes cleanup easier. I dropped about 3 tablespoons of dough per cookie, spaced 2-3 inches apart to allow for spreading. After sprinkling a little extra sugar on top for a sweet crust, baking at 325°F (165°C) for 15-20 minutes yielded golden brown cookies with edges that were just set but not too crispy. These banana cookies make a great quick snack or a modest dessert. They might not be as rich as traditional chocolate chip cookies but offer a unique fruity twist that's both comforting and satisfying. Plus, they're a good way to use ripe bananas before they go to waste.
