🥦 Diabetic-Friendly Breakfast Veggie Scramble
Serves: 1 hearty portion

Ingredients
3 large eggs
½ cup sliced sausage (low-sugar or nitrate-free)
½ cup chopped broccoli florets
¼ cup sliced onion
¼ cup cherry tomatoes, halved
1 teaspoon olive oil or butter
Salt and pepper to taste
Optional: a sprinkle of shredded cheddar or your favorite low-carb cheese
Directions
1. Sear and char: Heat olive oil or butter in a skillet over medium-high heat. Add the sausage, broccoli, and onions. Let them cook without stirring too much—this helps them get that good golden-brown char and a slightly smoky flavor.
2. Add tomatoes: Toss in the tomatoes and sauté for about a minute until they just start to soften.
3. Add eggs: Push the veggies and sausage to one side of the pan, crack in the eggs, and scramble them gently. Once the eggs are halfway cooked, fold everything together so it’s all coated and cooked through.
4. Finish and serve: Add a little cheese on top if you like, then plate it up and enjoy.
