1 Pan Hawaiian Chicken Thighs 🌸 easy dinner idea

Ingredients:

– 1–1.5 lb chicken breast or boneless skinless thighs, cubed

– 1 red bell pepper, chopped

– 1 orange bell pepper, chopped

– ½ red onion, chopped

– 1 cup pineapple chunks

– ½ cup Hawaiian-style BBQ sauce (I use Primal Kitchen)

– 1 tbsp avocado oil

– ¼ tsp salt + pepper to taste

– Juice of 1 lime

– Cilantro + sesame seeds for garnish

Directions:

1. Preheat oven to 350°F and line a sheet pan with parchment paper. Lightly spray with avocado oil.

2. In a large bowl, toss chicken with salt, pepper, and avocado oil.

3. Add bell peppers, onion, and BBQ sauce to the bowl and mix well to coat.

4. Spread everything on the sheet pan and bake for 20 minutes.

5. Add pineapple, then bake another 5–10 minutes (until chicken hits 165°F).

6. Squeeze lime juice over the top and garnish with cilantro + sesame seeds.

7. Serve over cauliflower rice, white rice, or brown rice. Drizzle extra BBQ sauce if desired.
