You know that feeling when you hit Costco and find a new favorite item that makes mealtime so much easier? That was me this week! My family of three is always looking for healthy, quick dinner options, and I just discovered the absolute best deal on great value wild caught skinless cod fillets. Seriously, if you haven't added these to your cart, you're missing out! First off, 'wild caught' is a big win for me. I always try to prioritize sustainable and healthier seafood options. And 'skinless' means zero extra prep time, which is a lifesaver on busy weeknights. Plus, the 'great value' aspect at Costco can't be beaten. These fillets come in a generous pack, perfect for getting a few meals out of one purchase, making it super budget-friendly for a small family like mine. It's truly a no-brainer when you're trying to feed hungry mouths without breaking the bank or spending hours in the kitchen. So, what do I do with them? My go-to is usually a simple baked cod. I'll pat the fillets dry, season them with salt, pepper, a little garlic powder, and a squeeze of lemon. Pop them in the oven at 400°F for about 12-15 minutes, and they're flaky perfection. Another favorite is pan-searing them. A little olive oil in a hot pan, sear for 3-4 minutes per side until golden. Quick and delicious! To make a complete meal, I often pair the cod with a fresh side salad. This time, I grabbed one of those fantastic 'CHOPPED KIT' salads from Costco – so easy! Sometimes, if I'm feeling a bit more adventurous, I'll whip up a quick sauce using some 'Chipotle Ranch' dressing I also found there, just to give it a little kick. And let's not forget the sides! While I love fresh 'APPLES' and 'Pears' for snacking, my family also loves having a rustic bread with our fish, so the 'Rustic Italian Loaf' from Costco is always a good idea to sop up any delicious juices. While this haul was definitely centered around these amazing cod fillets, my Costco trips always involve stocking up on other staples. I often pick up 'GRASS-FED GROUND BEEF' for tacos or meatballs on other nights, and 'ORGANIC CHICKEN STOCK' is a pantry essential for soups and stews. And for snacks, those 'STRAWBERRY MINI FRUIT BARS' or some 'JERKY' and 'BEEF STICKS' are always a hit with my little one. It's all about making the most of those bulk buys! Having these great value wild caught skinless cod fillets in my freezer makes meal planning so much less stressful. They cook from frozen in a pinch, making them incredibly convenient.
