Creole-Style Chickpea Omelet
CREOLE CHICKPEA OMELET (PLANT-BASED) 🍳🌱

Ingredients
½ cup chickpea flour
½ cup water or unsweetened almond milk
1 tbsp nutritional yeast
¼ tsp turmeric
¼ tsp black salt (kala namak)
¼ tsp garlic powder
¼ tsp onion powder
Black pepper to taste
Creole Filling
1 tbsp olive oil
2 tbsp diced onion
2 tbsp green bell pepper
2 tbsp celery
1 clove garlic, minced
¼ tsp Creole seasoning (salt-free preferred)
Pinch of thyme
Optional: vegan cheese, green onions, hot sauce
Instructions
1️⃣ Whisk chickpea flour, liquid, nutritional yeast, turmeric, black salt, garlic powder, onion powder, and pepper until smooth. Let rest 5–10 minutes.
2️⃣ Sauté onion, bell pepper, and celery in olive oil until soft. Add garlic, Creole seasoning, and thyme. Cook 30 seconds and set aside.
3️⃣ Heat a lightly oiled skillet over medium heat. Pour in batter and spread evenly.
4️⃣ Cook 3–4 minutes until set, add filling to one side, fold, and cook 1–2 more minutes.
5️⃣ Finish with green onions and hot sauce.
