Ingredients:

- ½ green bell pepper, diced

- 2 celery stalks, diced

- ½ yellow onion, diced

- 12 oz smoked sausage, sliced

- 1 tbsp tomato paste

- 1½ cups crushed tomatoes

- 2 cloves garlic, minced

- 1 tbsp butter or oil

Directions:

- In a pan, sauté diced bell pepper, celery, and onion in butter

- Add tomato paste and cook it down

- Stir in crushed tomatoes and garlic
