Honey Pineapple Salmon
Ingredients:
- 4 salmon fillets
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- Green onions, chopped (for garnish)
Instructions:
1. In a bowl, whisk together pineapple juice, soy sauce, honey, garlic, ginger, sesame oil, salt, and pepper.
2. Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, making sure it's well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
3. Preheat the oven to 400°F (200°C).
4. Place the marinated salmon fillets on a baking sheet lined with parchment paper. Pour any remaining marinade over the fillets.
5. Bake the salmon for 12-15 minutes, or until it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
6. Optional: broil the salmon for an additional 2-3 minutes to caramelize the top.
7. Garnish with chopped green onions before serving.
8. Serve the Honey Pineapple Salmon with your choice of side dishes like rice, quinoa, or steamed vegetables.
