✨ Restaurant-Quality Braised Short Ribs at Home ✨

Ingredients
* 4–5 lbs beef short ribs
* Salt & black pepper
* 2 tbsp olive oil
* 1 large onion, diced
* 3–4 carrots, chopped
* 3 celery stalks, chopped
* 5 garlic cloves, minced
* 2 tbsp tomato paste
* 2 cups Cabernet Sauvignon
* 3 cups beef broth
* 2 sprigs fresh rosemary
* 5–6 sprigs fresh thyme
* 2 bay leaves
Mashed Potatoes
* Petite potatoes
* Butter
* Heavy whipping cream
* Salt & pepper
👩🏽🍳 Instructions
1. Preheat oven to 390°F.
2. Season the short ribs generously with salt and pepper.
3. Heat olive oil in a Dutch oven and sear the short ribs on all sides until deeply browned. Remove and set aside.
4. In the same Dutch oven, sauté the onion, carrots, and celery until softened.
5. Add the garlic and tomato paste. Cook for 1–2 minutes.
6. Pour in the Cabernet Sauvignon and scrape up all the flavorful browned bits from the bottom of the pot. Simmer for about 5 minutes.
7. Stir in the beef broth, rosemary, thyme, and bay leaves.
8. Return the short ribs to the Dutch oven, cover with the lid, and bake for 2 hours 30 minutes, or until the meat is fall-off-the-bone tender.
9. Remove the herbs and bay leaves. If you’d like a thicker sauce, simmer it on the stovetop for a few minutes.
10. Serve over creamy mashed potatoes and spoon that rich sauce over the top.
