Make a wild yeast starter by soaking unwaxed berries or raisins in sweet water until it turns bubbly and smells fruity. Use it for sourdough or natural soda, then refrigerate when active. If you see fuzzy mold or a rotten smell, toss it.

Jar + fruit + water + 1–2 tsp sugar.

Cover with cloth; stir daily.

Ready in 2–5 days: bubbles + pleasant smell.

Strain; chill; use soon.

Wild yeast — yeast on fruit skins.

Lactic bacteria — adds tang; lowers pH.

Mold — fuzzy growth; discard.

Stat: 48M foodborne illnesses/year (CDC).

Who should NOT: immunocompromised, pregnant, or young kids.
