I made this some time ago. It was one of the best things I’ve made. I went off a recipe from the internet.
A good amount of salt, very savory and good seasonings all around.
Ingredients I used:
1 lb ground chicken (you can also substitute it with ground turkey or beef)
1/2 tablespoons of salt
1-2 tablespoons of (ground) black pepper
Garlic Powder to taste
Onion Powder to taste
Dry Dill to taste (1-2 teaspoons)
1/2 Cup of Breadcrumbs
1 Cup Milk (use whatever milk you want)
Notes:
First, stir the mixture with your hands or utensil. Then lightly slap the mixture on each hand until slightly flat. After that, shape the mixture into a circle with your thumbs and fingers.
If you do use ground beef, I would recommend using 93% Lean / 7% Fat. Less time consuming.
If the mixture is still too wet add 1/4 cup more of breadcrumbs. If the mixture is too dry then add more milk, 1/4 cup at a time, depending on the amount you want to make.

Beyond the salt, pepper, garlic, and onion powder, I love incorporating a good tablespoon of fresh ginger-garlic paste. This is a staple in almost every Pakistani dish and adds an incredible aromatic depth. For a bit of a kick, finely chopped green chilies (adjust to your spice preference!) are a must. I also like to add about half a teaspoon each of ground cumin, coriander powder, and a tiny pinch of turmeric for color and earthy notes. Sometimes, a touch of red chili powder (Kashmiri chili powder works wonders for color without too much heat) can also be added. And for that signature warmth, a quarter teaspoon of garam masala, added towards the end of mixing, ties all the flavors together beautifully.
When it comes to serving these Pakistani-inspired chicken patties, the options are endless and equally delicious! One of my favorite ways is to enjoy them street-food style. Imagine these patties nestled in a soft bun, slathered with a tangy mint raita or a sweet and spicy tamarind chutney, topped with fresh sliced onions and tomatoes – it’s just divine! They make for an incredible chicken patty burger experience that's miles away from your typical fast-food version.
Alternatively, for a more traditional meal, I often serve them alongside a fragrant rice dish like a simple pulao, or with warm, freshly made roti or naan. A side of cooling yogurt raita, perhaps with some cucumber and mint, provides a lovely contrast to the spiced patties. They also make fantastic appetizers for gatherings; I just arrange them on a platter with various chutneys for dipping.
A little tip I picked up for extra juiciness and flavor is to sometimes add a finely chopped small onion and a handful of fresh chopped cilantro to the mixture. If your mixture feels a bit loose after adding these wet ingredients, don't hesitate to add an extra tablespoon or two of breadcrumbs until it's just right for shaping.
