They're super easy to make – just one tablespoon of ground flaxseed meal mixed with three tablespoons of water, let it sit for a few minutes until it thickens, and voilà! You have a perfect binder that mimics the role of an egg. This makes those delicious, tender cookies accessible to even more people, which is something I truly love about experimenting with ingredients. Now, about the flavor! While some might be looking for pumpkin spice cookies without pumpkin puree, it's important to understand the role of the puree in this type of recipe. Here, the pumpkin puree isn't just for flavor; it's a structural component replacing the butter, providing moisture and a lovely, tender crumb. The actual pumpkin spice flavor usually comes from a blend of warm spices like Cinnamon and Nutmeg (both of which are fantastic additions to these cookies!). So, if you want just the spice flavor in a traditional butter-based cookie, you'd add those spices directly. But if you're aiming for a butter-free, moist, and slightly healthier cookie with the added benefits of pumpkin, then the puree is key. It adds a natural sweetness too, allowing me to sometimes reduce the amount of added Organic sugar or use alternatives like Coconut sugar or Date syrup for a more wholesome touch. The combination of ingredients really plays a part in achieving those PERFECT CHOCOLATE COOKIES. Using Spelt flour can give a slightly different, often nuttier flavor and lighter texture compared to all-purpose flour. And don't forget the leavening agents like Baking soda and Cornstarch – they’re crucial for that rise and chewiness we all love. It’s all about balancing these elements to get that ideal cookie.
