✶ The Best Blueberry Donuts ✶
Fluffy and moist, so tender, filled with lots of blueberries and topped with an amazing fresh blueberry glaze. These are the best baked blueberry donuts you will ever have.
🔘Ingredients:
For the Donuts
250 g all-purpose flour (spooned, leveled)
1 tbsp baking powder
1/2 tsp salt
275 g fresh blueberries
1 full Orange zest
1 tbsp orange juice
1 tbsp all purpose flour (for tossing the blueberries)
113 g unsalted butter (melted)
190g granulated white sugar
3 large eggs (room temp)
1 tsp vanilla
124g sour cream (room temp)
120 ml milk (room temp)
🔘Blueberry Glaze
200g powdered sugar
2 tbsp blueberry jam
1 tsp vanilla
3 tbsp heavy whipping cream
🔘Prep and Baking process:
Preheat the oven to 360 degrees. Grease a donut pan and set aside.
Start by adding the blueberries to a small bowl and sprinkle flour over them. Stir to coat and set aside as well. (Helps preventing from sinking to the bottom).
In a large bowl whisk together for 1 minute eggs, sugar and milk. After that add sour cream, melted butter, vanilla and whisk for another minute. Add orange zest and orange juice. Mix with spatula and start adding dry ingredients.
Add your flour, baking powder and salt. First mix with spatula and then on low speed mix with mixer until well combined. Add in the blueberries and gently fold them into the batter with spatula.
Then add the batter to a piping bag and cut off the tip. Pipe the batter into the prepared donut pan until each well is three-quarters full like on the video.
Bake the donuts for 15 minutes. Let them cool for 15 minutes in the pan then transfer them to a cooling rack to cool completely. Then repeat with the rest of the batter until all the donuts are baked.
While your donuts are cooling start making blueberry glaze. Into a medium bowl (big enough to dip donuts) add powdered sugar, blueberry jam, vanilla and heavy whipping cream. Whisk until smooth.
Dip each donut into the glaze and return each to the rack. Let the icing set on the donuts. Decorate with Gold leaves (optional). Serve and Enjoy!♥️
