Daughter special! Fruit cake

It was my daughter's birthday the other day, so I made a fruit cake with her.
For this cake, which used plenty of fruits such as peaches, mandarins, pineapples, and mangoes, my daughter chose fruits and decorated them.
Fruits start with taking water, but my daughter silently arranges them on a bat with kitchen paper.
When I whipped the cream myself, I did my best to finish it while saying "My hands hurt."
I had made the sponge cake in advance, but this time it didn't swell much and it was a bit disappointing.
Next time I make it, I think I'll have my daughter challenge from making sponge (* ^ ^ *)

70 g of cake flour
Sugar A 70 g
4 eggs
・ 200 ml fresh cream
· Sugar B 15 g

《 How to make 》
After draining the canned fruits in a colander, arrange them on a vat lined with kitchen paper and remove the water firmly
Put butter or oil on the inside (side) of the mold in advance, and put a cooking sheet on the bottom
① Divide the egg into yolk and egg white, and divide the sugar A into about 1: 2
Whisk the egg whites until creamy.
③ Whisk the egg yolk until it has a mayonnaise-like color and texture.
④ Put ① in ② and mix like cutting
⑤ After mixing to some extent, sift the cake flour in 2-3 times and mix like cutting
⑥ When the cake flour is mixed, pour it into a mold and bake in an oven preheated to 170 degrees for 25 to 30 minutes.
⑦ After baking, stick it with a bamboo skewer, and if the dough does not stick, OK → When it cools down to the point where the mold touches, take out the dough and let it cool
8. Add sugar B to the cream and whisk until creamy.

子どもと一緒にフルーツケーキを作るとき、いちばん差が出るのが「フルーツの水分」と「クリームの固さ」だなと実感しました。特に缶詰の桃・みかん・パイナップルはシロップをしっかり切っても、表面に水分が残っているとスポンジがすぐベチャッとなりがち。わが家では、ザルで切ったあとにキッチンペーパーを敷いたバットに並べて、上からも軽く押さえるようにして水気を取っています。マンゴーも同じで、カットしてから少し置くだけでも水分が出るので、最後のデコ直前にもう一度ペーパーで軽く拭くと失敗しにくいです。 デコレーションは、子どもが達成感を感じやすい工程なので“自由枠”を残すのがおすすめ。先にスポンジの間に生クリームを塗ってフルーツを挟むところまでは大人が整えて、上の飾り付け（みかんやパイナップルを並べる、桃を中心に置くなど）を子ども担当にすると、形も崩れにくくて楽しめました。缶切りで缶詰を開ける作業はケガに注意が必要なので、最初は大人が一緒に手を添えると安心です。 生クリームは、泡立てすぎるとボソボソになって塗りにくいので「すくうと角が少しお辞儀するくらい」を目安にしています。手動だと「手が痛い…」になりやすいので、ハンドミキサーがあると子どもも参加しやすいです（低速→中速で一気に）。 スポンジが思ったより膨らまないときは、卵白のメレンゲがゆるい・混ぜすぎ・粉を入れたあとに練ってしまう、のどれかが原因になりやすい印象でした。メレンゲはツノが立つまで、卵黄は白っぽくもったりするまで。合わせた後は“切るように”混ぜて、粉は2〜3回に分けて入れると安定しやすいです。焼き上がりはオーブン差が大きいので、途中で扉を開けないようにして、最後に竹串チェックで調整しています。 最後に、子どもが選んだフルーツ（桃・みかん・パイナップル・マンゴー）が全部乗ると見た目が一気に華やかになります。誕生日や記念日に、買うより少し手間でも“自分でデコしたケーキ”は思い出に残るので、次はスポンジ作りから一緒に挑戦したいです。
