Granulated sugar: 300g
Water: 200 g
Powdered agar: 4g

琥珀糖って見た目が可愛いだけじゃなくて、食べ方で印象がガラッと変わるお菓子だなと思いました。うちでは完成したらまずは「そのまま」を推します。外側のシャリッとした膜と、中のゼリーっぽい部分の食感差がいちばん分かりやすいから。特に少し厚みがあるカットだと、噛んだ瞬間に“シャリ→ぷる”が来て楽しいです。 食べ方のコツは、乾燥具合で変えること。乾燥が短めで中がしっとり寄りのときは、常温で少し置いてから食べると香りと甘みを感じやすいです。逆にしっかり乾いて「ほぼ金平糖」みたいになった子は、口の中でゆっくり溶かす食べ方が合いました。カリカリを一気に噛むより、飴みたいに転がす方が食感が長持ちします。 アレンジの食べ方もいろいろ試してみました。おすすめはヨーグルトに少量トッピング。琥珀糖は甘いので、無糖ヨーグルトに数粒のせるくらいがちょうど良く、シャリシャリがアクセントになります。炭酸水やレモン水に入れるのも見た目が涼しげで、色付きの琥珀糖だと特に映えます（入れすぎると甘くなるので注意）。アイスに散らすのも楽しくて、カラフルな結晶っぽい形がそのままデザートの飾りになります。 保存は「湿気が敵」でした。乾燥が進むほど外側が溶けやすくなるので、完全に冷ましてから密閉容器へ。うちは乾燥剤を一緒に入れて、直射日光の当たらない場所に置いています。冷蔵庫は結露しやすいので、入れるなら必ず密閉＆出し入れで水滴が付かないように気をつけています。 あと、作っている途中の観察も食べ方につながります。バットに並べたカラフルな琥珀糖を、時々ひっくり返して乾燥の進み具合を見比べると「今日は外側が増えた！」が分かって面白い。うちはハンディファンで乾燥を手伝ったら、表面が均一になりやすくて食感もそろいやすい気がしました。 最後に、初めての人向けの目安としては「まずは厚めに切る→乾燥は短めから味見→好みで延長」。食べ方まで含めて調整できるのが、手作り琥珀糖のいちばんの楽しさでした。
