My mother's siblings and my cousins were all nostalgic because their parents (my mother's sisters) made it. Now it's only my relatives and I'm the only one who makes it. Just slice the waterless vegetables with a slicer and mix them with soy sauce. It's very easy to do. It's not sweet and goes well with rice and sake. Ochazuke is the best.
I make a lot in a big pot and eat it for about half a year by sharing it or freezing it.
Material
Barley koji (1 kg this time)
3 or more thick and large carrots
Two thick and long burdock
5 large pieces of ginger
1.3 liters of soy sauce
An appropriate amount of chopped kelp
This is the first time I've added chopped dashi kelp. It seems to have become mellow.
How to make
Just mix everything and mix every day. Just let it mature in an environment of 20 to 25 degrees. When it's done, put it in the refrigerator and store it. Freeze what you can't eat.
