Sweet beef chili bowls

Ingredients (2 bowls)

• 1 lb lean ground beef (93/7 or 96/4)

• 1 cup cooked jasmine rice (or cauliflower rice for lower calories)

• 1 cup mixed veggies (broccoli, green beans, carrots — frozen is totally fine)

• 2 tbsp sweet chili sauce

• 1 tbsp low-sodium soy sauce

• 1 tsp garlic powder

• 1 tsp onion powder

• ½ tsp chili flakes (optional)

• Salt & pepper to taste

• Optional toppings: sesame seeds, green onion, lime squeeze

Directions

1. Cook the beef:

Heat skillet (stainless steel is best for browning). Add the beef, break it up, season with garlic powder, onion powder, salt & pepper.

2. Add flavor:

Once browned, add sweet chili sauce + soy sauce. Let it caramelize slightly to get those glossy, sticky edges.

3. Cook your veggies:

Steam or sauté veggies separately. (Frozen veggies microwave great and stay bright.)

4. Build your bowl:

• Base of hot rice

• Veggies

• Sweet chili beef

• Spoon a tiny extra drizzle of sweet chili on top

• Add sesame seeds + green onion
