Espresso cookies
These soft and chewy espresso cookies are so good! Here’s the recipe:
3/4 cup unsalted butter(browned)
1 cup brown sugar, packed
1/4 cup granulated sugar
1 egg + 1 egg yolk, room temperature
1 tablespoon pure vanilla extract
1 3/4 cup all-purpose flour
3/4 teaspoon baking soda
1 1/2 cups semi sweet chocolate melted
1-2 tsp espresso powder
1. Preheat your oven to 350F & line a cookie sheet with parchment paper
2. Mix your browned butter, espresso powder,
brown sugar & granulated sugar. Add eggs and vanilla.
3. Add the baking soda & flour.
4. Scoop & Bake the cookies for 10-12 minutes. Once they are cooled dip them into the melted chocolate and place on a sheet of parchment paper until the chocolate is set.
