Green Goddess salad

Green Goddess Salad

Ingredients:

1/4 green cabbage

1/2 head lettuce

2 cucumbers

1/4 green onion

Dressing:

1 packed cup fresh basil

1/2 cup baby spinach

1 medium avocado

1/2 jalapeño (optional)

1/2 teaspoon onion powder

1/3 cup cashews

2 tablespoons nutritional yeast

Juice of 1 lemon

1 tablespoon maple syrup

1/4 cup olive oil

Salt & pepper, to taste

Instructions:

Combine all the dressing ingredients in a food processor and blend until smooth. You can adjust the consistency by adding a bit of water if it's too thick.

In a large bowl, add your salad base ingredients (lettuce, cabbage, cucumber, green onion)

Pour the prepared dressing over the salad base.

Gently toss the salad until all the ingredients are evenly coated with the dressing.
