Beyond its tangy, salty flavor that brightens any dish, it's surprisingly good for you. It's a fantastic source of calcium, crucial for strong bones and teeth – something I'm very conscious of now for both myself and my little one. Plus, it contains beneficial probiotics, which are excellent for gut health. A happy gut means a happy me! It also offers a good amount of high-quality protein, which keeps me feeling full and energized, and B vitamins, contributing to sustained energy levels throughout the day. For me, making sure I'm 'eating more healthier things' means including ingredients that truly nourish from the inside out. Then there's spinach, a true superfood. It’s loaded with iron, essential for preventing fatigue, and a host of vitamins like K, A, and C, along with powerful antioxidants that protect our cells. Combined with eggs, which are a complete protein source and rich in choline (essential for brain health and development) and Vitamin D, you have a breakfast that's not just delicious but incredibly balanced and satisfying. This 'equal balance' of nutrients truly makes it a 'high vibrational breakfast' that sets a positive tone for the entire day. What I love most is how versatile and easy this meal is to prepare, even on busy mornings. I usually whip up a scramble, ensuring that perfect 'egg ratio to the feta cheese' – I like mine with a good amount of feta, making it wonderfully creamy but not too heavy. Sometimes I keep it 'lightweight' and simple, and other times I 'pair mine with a hash brown' or a slice of whole-grain toast for a more substantial meal. If you're like me and trying to 'cut back on my diet' in a sustainable, healthy way, focusing on nutrient-dense meals like this is a game-changer. And for my 18-month-old son?
