Cornbread Chili Bowls

This Cornbread Chili Bowl is more than just comfort food to me. It’s a reminder that we have the power to rebuild. If you're looking for an easy and delicious dinner idea, I hope you'll give this a try. We got this! ✨

Ingredients:

- 1 lb ground beef (80/20)

- ½ white onion, diced

- 1 packet chili seasoning

- 1 can (15 oz) kidney beans, undrained

- 1 can (14.5 oz) diced tomatoes, undrained

- 1 tbsp olive oil

- 1 box (8.5 oz) corn muffin mix (Jiffy works!)

- 1 egg

- ⅓ cup milk

- 1 cup shredded cheddar

- ½ cup sour cream

- ¼ cup green onions

Instructions:

1. Cook beef & onion in oil until browned. Drain.

2. Stir in chili seasoning, beans, and tomatoes. Simmer 10–15 min.

3. Mix muffin mix, egg, milk and pour into greased muffin tin. Bake 400°F for 15–18 min.

4. Hollow centers to make bowls.

5. Fill with chili, top with cheese, sour cream + green onions
