1. Boil beef shank with lemongrass + salt until tender (or pressure cook 20–25 mins). When the beef done cooking -Ice bath - slice thin

2. Dressing sauce

* 3 tbsp fish sauce

* 2 tbsp sugar ( a little more if you like sweet)

* 3 tbsp lime juice

* 1 tbsp water

* 2 tsp garlic + chili

3. Toss beef with 2 tbsp sauce. Rest 10–15 mins

4. Prep veggies (green mango, apple, carrot..), Vietnamese mint + fried shallots

5. Toss veggies with remaining sauce

Add beef back in → mix well
