Easy Teriyaki Chicken Rice Bowl Recipe
Want an easy and cheap meal? This is one of my favorites!
Ingredients:
• Broccoli (I used frozen)
• Chicken
• Baking soda
• Rice
• Teriyaki sauce
• Seasonings (I used chili powder and everything bagel seasoning)
Directions:
1. Prepare rice.
2. Cut chicken into small pieces. In a bowl, mix cold water with a little bit of baking soda. Add chicken pieces into the bowl and let sit, refrigerated, for about 10 minutes (this will give the chicken a very soft texture, alternatively you could skip this step if you want a crispier texture)
3. Heat up a skillet with a little bit of oil, I recommend olive oil or sesame oil. Add chicken and seasonings like chili powder, onion, garlic, everything bagel, etc. Cook until golden
4. Prepare your broccoli.
5. Assemble your bowl and top with teriyaki. Enjoy!
Additional tips: You can cook your chicken in the teriyaki! You can also add in water chestnuts, carrots, onion.

Hey foodies! So glad you're loving this easy teriyaki chicken rice bowl recipe! I wanted to share a few more tips and tricks I've picked up to make this dish even better, especially if you're all about saving money, meal prepping, or just want to customize it even more. Making it Even More Budget-Friendly (Beyond 'cheap dinner' OCR): I know we talked about this being a cheap dinner, but I always look for ways to cut costs further. My biggest tip? Buying chicken in bulk when it's on sale and freezing it. Frozen broccoli is already a win, but if fresh is cheaper, chop it up and freeze portions yourself! For rice, I always buy large bags – it lasts forever and is way more cost-effective. Sometimes, I even use store-brand teriyaki sauce instead of a specific brand like 'Veri Veri Teriyaki' if I'm really pinching pennies, though the flavor profiles can differ. If you really want to save, you can even whip up your own teriyaki sauce from soy sauce, brown sugar, ginger, and garlic – it's surprisingly simple! My Meal Prep Secrets for Teriyaki Chicken Bowls (Addresses 'meal prep' & 'container' queries): This recipe is a lifesaver for meal prep, and I've perfected my routine. After assembling my bowls, I make sure to let everything cool completely before putting on the lids and refrigerating. This prevents condensation and keeps things fresh! I typically store my teriyaki chicken bowls in airtight glass containers – they're great for reheating and last about 3-4 days in the fridge. When it's time to eat, I just pop them in the microwave for 2-3 minutes, stirring halfway through. Sometimes, I warm up frozen broccoli separately, like the OCR mentioned, to maintain its texture. If you're using fresh veggies, adding them right before serving can keep them crisp. Veggie & Chicken Variations I Love (Addresses 'vegetables bowl', 'rotisserie chicken', 'boiled chicken' queries): While broccoli is my go-to, don't limit yourself! I often throw in shredded carrots, snap peas, bell peppers, or even a handful of spinach at the end. Water chestnuts, as I mentioned, add a great crunch. For the chicken, if you've got leftover rotisserie chicken, just shred it and toss it with the teriyaki sauce – no need to cook from scratch! Or, if you prefer a leaner, simpler option, boiled chicken works perfectly too; just cut it into pieces and mix with the sauce. Remember that baking soda trick for super tender chicken? If you want a crispier texture, skip that step and pan-fry a bit longer, or even bake your chicken for a different result. Making it a Healthier Power Bowl (Addresses 'healthy chicken rice bowl' query): For those looking to boost the health factor, I often swap white rice for brown rice or even quinoa for extra fiber. Loading up on even more veggies, like adding extra steamed vegetables alongside the chicken and rice, is always a great move. You can also look for low-sodium teriyaki sauces or dilute regular sauce with a bit of water or chicken broth. Sometimes, I'll add a sprinkle of sesame seeds or a dash of sriracha for flavor without adding many calories. It's all about balancing those delicious flavors with wholesome ingredients! I hope these extra tips help you make your teriyaki chicken rice bowls even more amazing and perfectly tailored to your needs!
