Creamy Chicken Orzo
I have been wanting to try this for a while and I finally made it. (Spoiler alert… it was amazing)
I cut two thick chicken breasts in half and then flattened them out with my rolling pin. I made a crust for the chicken with stake crackers, cumin, garlic powder, salt, pepper, and smoked paprika. I blended that together then pressed it into the chicken. I pan fried the chicken in my cast iron with butter. Set them aside in the oven to keep warm, and started on the orzo.
For the orzo I used the same pan I cooked the chicken in. I added about 2 tbs of butter and threw in minced garlic and chopped onions (I used white onion but it doesn’t matter). We like a lot of garlic so use it to your preference. Once the onions were translucent I threw in the orzo pasta, (uncooked!) I used about half of a box, I’d say it was just under 2 cups. Mixed it around with a little more butter and the sautéed onions and garlic. I then put in one cup of chicken bone broth, and one cup of heavy whipping cream. Brought it to a simmer and kept stirring every 5-10 minutes until noodles are fully cooked. I threw in a hand full and a half of shred Parmesan and added in a little more salt. You can add your chicken to the orzo but I prefer to have it on the side, I’m a bit picky with certain foods touching each other lol.
