Creamy chicken sausage orzo skillet 🍳 👇✨
Ingredients:
1 tbsp olive oil
12 oz spicy Italian chicken sausage, sliced
6 cloves garlic, minced
1 cup orzo, dry
2 cups low sodium chicken broth
1/4 cup full-fat canned coconut milk (or heavy cream)
1 Tbsp low sodium soy sauce
1 tsp onion powder
1/2 tsp red pepper flakes
1/2 tsp black pepper
1/4 tsp salt
1 tsp fresh or dried thyme
1/2 cup freshly grated parmesan cheese
2 cups baby spinach leaves
Instructions:
-Drizzle olive oil in a large skillet over medium-high heat and cook the chicken sausage until browned and cooked through, about 6 to 7 minutes. Add in minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn it.
-Add in the dry orzo and toast in the pan along with the chicken sausage and garlic for about 60 seconds. Pour in the chicken broth to deglaze the pan then add in the coconut milk, soy sauce, seasonings and fresh thyme, mixing well.
-Bring the orzo mixture to a boil then turn the heat down, cover and let the orzo simmer for 10 to 12 minutes, making sure to stir occasionally so that the orzo doesn’t stick to the bottom of the pan. Orzo is ready once it is tender and most of the liquid has been absorbed.
-Stir in the spinach leaves and cook until they are wilted then mix in the freshly grated parmesan cheese. Taste and season with additional salt and pepper, if needed, and enjoy this creamy orzo skillet!

This creamy chicken sausage orzo skillet recipe is an absolute lifesaver on busy nights, and after making it countless times, I've picked up a few extra tips and tricks to make it even more perfect or adapt it to whatever you have on hand! It’s truly a versatile dish that tastes gourmet but comes together so easily. First, let's talk about the sausage. Browning your sliced chicken sausage properly is key. Don't rush this step! Giving it enough time to develop a nice golden-brown crust adds so much depth of flavor to the entire dish. That little bit of char and caramelization makes all the difference. When you add the garlic, be mindful not to burn it – just a quick sauté until it's fragrant, usually about 30 seconds, is all you need to infuse that wonderful aroma without any bitterness. For the orzo itself, the biggest secret to success is stirring. Orzo is notorious for sticking to the bottom of the pan, especially as it absorbs liquid. I always make sure to give it a good stir every couple of minutes during its simmer time. This ensures every grain cooks evenly and you get that beautiful, creamy texture without any burnt bits. You'll know it's ready when it's perfectly tender and most of the liquid is absorbed, creating that luscious sauce. Want to switch things up or add more veggies? This recipe is super flexible! While spinach is fantastic, I sometimes throw in sliced mushrooms when I sauté the sausage, or a handful of diced bell peppers with the orzo. Peas or even finely chopped kale would also work wonderfully. If you're out of chicken sausage, ground chicken or turkey can be seasoned similarly and used instead for a leaner option. Or, if you have leftover rotisserie chicken, you can shred it and stir it in at the very end with the spinach to warm through. If you're looking for even more creaminess, besides the coconut milk or heavy cream, a tablespoon or two of cream cheese or mascarpone stirred in at the end can elevate the richness beautifully. And for those who love a bit more kick, feel free to amp up the red pepper flakes or add a dash of your favorite hot sauce. On the flip side, if you're serving little ones, you can easily reduce or omit the red pepper flakes. When it comes to serving, a sprinkle of fresh parsley or basil really brightens up the dish and adds a pop of color. I often serve this with a simple side salad and some crusty bread to soak up all that delicious creamy sauce. It makes for an incredibly satisfying and complete meal. This skillet meal also makes great leftovers! When storing, let it cool completely before transferring it to an airtight container in the fridge. To reheat, I usually add a splash of chicken broth or milk to loosen it up and restore its creamy texture, gently warming it on the stove or in the microwave. It’s almost as good the next day! Enjoy creating your own perfect creamy chicken sausage orzo skillet!
