Vegan “scallops” and brown butter pasta

Was craving scallops and brown butter pasta but was on a fast at the moment where I wasn’t consuming meat! Sooooooo of course I found my favorite go to meat substitute : King oyster mushrooms! I can only find these in my local Asian market but they are a GAME CHANGER for meatless dishes! I slice them in large “scallop” sizes, cross cut one side, season them up, and sear them on both sides for about 4 min. Then I bathe them in a hot brown butter bath in a pan for less than 10min and I had the BEST melt in your mouth “scallops” in mushroom form lol 😂🙌🏾 don’t knock it till ya try it!
