Garlic and Herb Chicken Recipe:

Ingredients:

4 leg quarters

1 white onion

Green onion

1 green bell pepper

1 clove garlic

1/3 cup chopped parsley

Fresh thyme

All spice

Pepper flakes

( feel free to add your choice of seasonings)

Instructions:

Wash and clean meat throughly

1 tsp onion powder

1 tsp garlic powder

1 tsp paprika

1 sazon packet

Add green sauce mixture

( for green sauce I used onion, green onion, scotch bonnet pepper, bell pepper and thyme)

Add chopped parsley & thyme

marinate for at least 2 hours

Airfry for 15 mins @380 Fahrenheit on both sides ( cover with a foil paper to prevent drying out)

Remove foil paper after 30 min mark and airfry for an additional 5 mins at 380 F

But a lot of you have been asking about making this with chicken breast, and guess what? It's totally doable and just as delicious! Making this Garlic & Herb Chicken with breasts is a game-changer for quick, healthy meals. Chicken breasts are leaner, so they cook faster, but they can also dry out if you're not careful. Here’s how I get perfectly juicy air-fried garlic herb chicken breasts every time. First things first, for the marinade, you can absolutely use the same amazing green sauce mixture and seasonings from my original Chicken Recipe. For two large chicken breasts, I usually scale down the marinade ingredients slightly, maybe by a third. A little tip from my kitchen: if your chicken breasts are very thick, don't be afraid to butterfly them or pound them slightly to an even thickness. This ensures they cook evenly and quickly, preventing some parts from drying out while others are still catching up. This prep step is key for success! Once your chicken breasts are thoroughly coated in that delicious Garlic & Herb marinade – remember, at least 2 hours for flavors to meld, or even better, overnight in the fridge if you have the time – it’s time for the air fryer! Preheat your air fryer to 375°F (190°C) for a few minutes. This helps get a nice sear on the outside. For average-sized chicken breasts (about 6-8 oz each), I find that 12-15 minutes is usually perfect. Make sure to flip them halfway through to ensure even cooking and browning on all sides. Unlike leg quarters, chicken breasts cook relatively fast, so constant monitoring is good. To ensure they're cooked through and remain super juicy, always, always use a meat thermometer. You're looking for an internal temperature of 165°F (74°C) in the thickest part of the breast. The absolute moment it hits that, take them out! Seriously, every extra minute in the air fryer beyond this point can lead to dry chicken. Overcooking is the number one enemy of juicy chicken breast. And here’s another crucial step that many people skip: let your chicken breasts rest for 5-10 minutes after air frying. This allows the juices to redistribute throughout the meat, trapping all that wonderful moisture inside, keeping it tender and succulent. This Air Fryer Garlic Herb Chicken Breast is incredibly versatile and quickly became a staple in my weekly meal rotation. I love slicing it up for vibrant salads, adding it to whole-wheat wraps for a satisfying lunch, or serving it alongside roasted Mediterranean vegetables or a simple quinoa salad for a complete, healthy dinner. It’s seriously one of my favorite easy Chicken Recipes for meal prep because it reheats beautifully too. You can even cube it and add it to pasta dishes for an extra protein boost.
