Mushroom Chicken Stir-Fried Udon
Ingredients
• 2 packs frozen udon noodles (about 7–8 oz total)
• 1¼ cups cooked grilled chicken, sliced
• 1 cup brown mushrooms, sliced
• 1 cup cauliflower florets, cut very small
• ¾ cup shredded red cabbage
• ½ cup shredded carrots
• 3 green onions, sliced
Cooking
• 1 tbsp extra virgin olive oil
• 1 tbsp butter
• 2 cloves garlic, minced
• 1 tsp fresh ginger, grated
Sauce
• 1 tbsp oyster sauce
• 1 tsp soy sauce
• 1 tsp white miso
• 1 tbsp water
• 1 tsp rice vinegar
• ½ tsp sesame oil (finish)
Instructions
1. Boil udon just until separated (still firm). Drain well.
2. Heat pan on medium-high. Add oil. Add mushrooms in one layer; don’t stir for 2–3 min until browned. Add butter.
3. Add garlic, ginger, and green onion whites. Cook 30 seconds.
4. Add cauliflower; stir-fry 2–3 min.
Add carrots + cabbage; cook 1–2 min until tender-crisp.
5. Add udon. Spread out and let sear 30–45 sec, then toss.
6. Mix sauce ingredients. Drizzle over noodles.
Add chicken and toss 1–2 min until glossy and hot.
7. Drizzle sesame oil. Toss in green onion greens.
