The best ooey gooey cinnamon rolls!
These were some of the best ooey gooey cinnamon rolls I've ever made! and with my sourdough starter!!
Ingredients:
2 cups (400g) active bubbly starter
+ 1 cup (225g) warm filtered water
+ 6 Tbsp (84g) salted butter (melted)
+ 1 cup (200g) pure cane sugar
+ 8-9 cups (1200-1350g) unbleached
All Purpose flour (more if dough is too
sticky)
+ 2 cups (480g) warm milk
+ 2 large eggs, beaten (100g)
+ 1 tsp (6g) salt
Additional tips/notes:
You really want to let these go
the full 8+ hours overnight for
the initial rise, then stuff and
roll and let them double in size.
This can take anywhere from
another 3-6+ hours for your
second rise. Sourdough takes
a lot longer than commercial
yeast to rise.
Filling:
+ 1 cup (226g) butter softened
+ 2 cups (400g) brown sugar
+ 1 cup (200g) sugar
+ 2 Tbsp (12g) ground cinnamon
Vanilla Glaze
+ 3 cups (360g) powdered sugar
+ 1/2 cup (120g) cream (I use heavy or half half depending on what I have available)
+ 1 tsp (5g) pure vanilla extract
DIRECTIONS:
1. In a small bowl, mix together your 2 cups starter and 1 cup warm water. Set aside.
2. In a large bowl or stand mixer (7qt) put 2 cups warm milk, melted butter, 1 cup sugar and salt
in the bowl. Beat until mixed together,
3. Add in 2 cups of flour and mix until smooth. Add in the starter mixture to the bowl and mix in
the beaten eggs until all incorporated.
4. Gradually add in remaining flour and mix with a dough hook for two mins.
5. Remove dough from the bowl and place on a lightly floured surface. Knead by hand for a good
5-10 mins until it’s satiny smooth.
6. Cover with plastic wrap and let rise on the counter over-night (about 8-10 hours).
7. In the morning, remove from the bowl on a lightly floured surface and roll out the dough into
a really large rectangle. You want it to be about 1/2 inch thick.
8. Cover with softened butter and sprinkle with the brown sugar cinnamon mixture. Roll up the
dough into one long roll. It’s BIG!
9. Cut the rolls about 1.5-2 inches thick and place on a baking sheet lined with parchment.
10. Cover with a tea towel and let rise for another 2-3 hours or until fully doubled.
11. Preheat oven to 350 degrees and bake 25-30 mins until golden brown.
12. Remove from oven and let cool for a good 15 mins before slathering with the vanilla glaze.
