Soft Vanilla Cookies with Cream Cheese Frosting
Ingredients:
* ½ cup unsalted butter, softened
* ¾ cup granulated sugar
* 1 large egg, room temperature
* 1 ½ teaspoons vanilla extract
* 1 ¾ cups all-purpose flour
* ½ teaspoon baking powder
* ¼ teaspoon baking soda
* ¼ teaspoon salt
* 2 tablespoons cornstarch (keeps cookies soft)
Instructions:
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a large bowl, cream together butter and sugar until light and fluffy.
3. Beat in egg and vanilla until well combined.
4. In a separate bowl, whisk flour, baking powder, baking soda, salt, and cornstarch.
5. Gradually mix dry ingredients into wet ingredients until just combined.
6. Scoop dough (about 1½ tablespoons each) and roll into balls. Place 2 inches apart on baking sheet.
7. Bake for 9–11 minutes, until edges are set but centers are still soft.
8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before frosting.
Cream Cheese Frosting
Ingredients:
* 4 oz cream cheese, softened
* ¼ cup unsalted butter, softened
* 1 ½ cups powdered sugar
* 1 teaspoon vanilla extract
* Pinch of salt
Instructions:
1. Beat cream cheese and butter together until smooth and creamy.
2. Add powdered sugar gradually, mixing until fluffy.
3. Mix in vanilla and salt.
Frosting & Serving
* Spread or pipe frosting onto fully cooled cookies.
* Optional toppings: sprinkles, crushed cookies, or a light dusting of sugar.
Tips
* Don’t overbake—cookies should look slightly underdone in the center.
* Chill dough for 20 minutes if it feels too soft.
* Store frosted cookies in an airtight container in the fridge for up to 4 days.
* This recipe makes about 20–24 soft vanilla cookies, depending on how large you scoop them.
