Ingredients:
Salad:
1 large Chicken Breast
3/4 cup Cottage Cheese
2 Celery Stalks diced
2 Green Onions sliced
1/2 cup Shredded Cheddar Cheese
3 tbsp Chopped Fresh Jalapeno
5 slices Bacon cooked and crumbled
Cilantro Lime Dressing:
1/2 cup Sour Cream
1/4 cup Chopped Fresh Jalapeno
1/4 cup Fresh Cilantro
1/2 tsp Onion Powder
1/2 tsp Garlic Salt
Juice of 2 Limes
Instructions:
Cook chicken breast based on your preference. (Baked, boiled, grilled). Once cooked through, shred and chop into small pieces. Set aside to cool.
Chop celery, green onions and jalapenos.
In a large bowl combine the shredded chicken, celery, onions, jalapenos, bacon, cottage cheese and shredded cheddar cheese. Stir well.
In a food processor or blender, combine all of the DRESSING ingredients. Blend until smooth.
Pour the jalapeno dressing over the salad and toss.
Serve over salad greens, on keto bread, or enjoy as is!
