Ingredients:

2 cups shredded mozzarella cheese

2 oz cream cheese

1 ½ cups almond flour (super fine)

2 tsp baking powder

2 large eggs

1 tbsp butter (melted, for brushing)

Optional: ½ tsp garlic powder or dried herbs for flavor

Instructions:

Melt cheese:

In a microwave-safe bowl, combine mozzarella and cream cheese.

Heat in 30-second bursts until melted and smooth. Stir well.

Mix dry ingredients:

In another bowl, whisk together almond flour and baking powder.

Combine:

Add the eggs into the melted cheese mixture. Stir quickly.

Add in the almond flour mix and knead until a dough forms (slightly sticky).

Shape rolls:

Wet your hands slightly (to prevent sticking).

Roll dough into 6–8 small balls.

Bake:

Preheat oven to 375°F (190°C).

Place rolls on a parchment-lined baking sheet.

Bake 15–20 minutes until golden brown.

Finish:

Brush tops with melted butter.

Serve warm.
