This one, inspired by the vibrant flavors of the Mediterranean, quickly became my go-to for a healthy, light, and incredibly satisfying meal. If you're looking for an easy way to bring some sunshine to your dinner table, you absolutely have to try this. The beauty of this dish lies in its simplicity and the fresh, bold flavors. Let's start with the fish itself. I usually opt for a firm white fish like cod, snapper, or even halibut. Before anything else, I lightly season the fish. A drizzle of olive oil, a good pinch of salt and pepper, a dash of garlic powder, and a sprinkle of dried thyme (and sometimes a little sage, even if it's not always in the picture!) is all it takes. You can pan-sear it to get a lovely crust, or bake it in the oven – whatever is easiest for you. While the fish is cooking, we get to the heart of the dish: the incredibly flavorful tomato-based sauce. This is where all the magic happens! I start with two cans of diced tomatoes as the base. To that, I add about five spoonfuls of capers – they bring such a wonderful briny, tangy pop to every bite. And here's my secret weapon for serious depth: one can of anchovies. Now, before you wrinkle your nose, hear me out! When cooked down, the anchovies completely disappear into the sauce, leaving behind an incredible umami taste that elevates the entire dish without any fishy flavor. It's truly transformative! For even more richness, I stir in another pinch of garlic powder, a spoonful of mushroom seasoning/chicken bouillon (this adds so much savory depth!), and just a tiny bit of sugar to balance the acidity of the tomatoes.
