I often find myself throwing ingredients together, and sometimes, those spontaneous creations turn into absolute favorites. This one, inspired by the vibrant flavors of the Mediterranean, quickly became my go-to for a healthy, light, and incredibly satisfying meal. Let's start with the fish itself. I usually opt for a firm white fish like cod, snapper, or even halibut. Before anything else, I lightly season the fish. The brightness from the lemon and cilantro cuts through the richness of the sauce and butter, making every mouthful incredibly fresh and vibrant. To serve, I simply flake the cooked fish into the simmering sauce, letting it absorb all those wonderful Mediterranean flavors for a minute or two. Then, spoon a generous helping of the lemon-cilantro orzo onto your plate and top it with the luscious fish and tomato sauce. You can garnish with a bit more fresh cilantro or a lemon wedge.
