If you're like me and want a delicious, homemade dish without a huge fuss, this is it. I often keep a bag of frozen shrimp in my FRIGIDAIRE freezer, which makes this recipe even quicker – no defrosting needed if you buy the raw, peeled, and deveined kind! Here’s how I usually whip it up, making sure it's packed with flavor every time: Ingredients you'll need: 1 lb large shrimp (peeled, deveined, tails on or off – your preference!) 1 tbsp coconut oil or olive oil 1 small onion, finely chopped 2-3 cloves garlic, minced 1 tbsp fresh ginger, grated 1-2 tbsp red curry paste (adjust to your spice preference!) 1 can (13.5 oz) full-fat coconut milk 1/2 cup chicken or vegetable broth 1/2 red bell pepper, thinly sliced (optional, but I love the crunch and color) Handful of fresh spinach or kale (optional, for extra greens) Juice of 1/2 lime Fresh cilantro, chopped (for garnish) Salt and pepper to taste My Super Simple Steps: Prep the Shrimp: If using fresh shrimp, pat them dry. Season with a pinch of salt and pepper. If frozen, make sure they are thawed and patted dry. Keeping them perfectly chilled in my FRIGIDAIRE until I'm ready to cook makes a difference! Sauté Aromatics: Heat the coconut oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 3-5 minutes. Then, stir in the minced garlic and grated ginger, cooking for another minute until fragrant. Build the Curry Base: Add the red curry paste to the skillet and cook for about 1-2 minutes, stirring constantly. This really helps to toast the spices and bring out their flavor. Simmer the Sauce: Pour in the coconut milk and broth. Bring the mixture to a gentle simmer, then reduce the heat to low and let it cook for about 5-7 minutes, allowing the flavors to meld. If you're adding bell pepper, toss it in now so it can soften slightly. Add Shrimp & Greens: Increase the heat to medium-low. Add the shrimp to the simmering sauce and cook for just 2-4 minutes, or until they turn pink and opaque. Don't overcook them, or they'll get tough! If adding spinach or kale, stir it in during the last minute until it wilts. Finishing Touches: Remove from heat. Stir in the lime juice and adjust seasoning with salt and pepper if needed. Garnish generously with fresh cilantro. I usually serve this over fluffy jasmine rice or with some warm naan bread to soak up all that delicious sauce.
