Cowboy Butter Chicken Pasta
Ingredients 🛒:
12 oz rotini or fusilli pasta
1 lb chicken breast, cubed
4 tbsp butter
3 garlic cloves, minced
1 tsp Dijon mustard
1 tsp lemon juice
1/2 tsp smoked paprika
1/2 tsp red pepper flakes (adjust to heat level)
1 tsp Italian seasoning
Salt & pepper to taste
2 tbsp fresh parsley, chopped
1/2 cup grated Parmesan (optional for extra creaminess)
Directions 👩🍳:
Cook the Pasta:
Boil pasta in salted water until al dente. Drain and set aside.
Sear the Chicken:
In a large skillet, cook seasoned chicken in 1 tbsp butter until golden and cooked through. Set aside.
Make Cowboy Butter Sauce:
In the same skillet, melt remaining butter. Stir in garlic, Dijon, lemon juice, paprika, red pepper flakes, and Italian seasoning. Simmer for 2–3 minutes.
Bring It All Together:
Add chicken and cooked pasta into the skillet. Toss everything to coat well in that buttery goodness. Stir in Parmesan if using.
Finish & Serve:
Top with fresh parsley and serve hot!
