Ingredients
For the Fritters:
1 quart oil (for frying)
3/4 cup all-purpose flour
1 egg
1/2 cup milk
Ground cayenne pepper, to taste
Red pepper flakes, to taste
Seasoning salt, to taste
Pinch of salt (optional)
Ground black pepper, to taste
1 cup chopped conch
1/2 onion, chopped
1/4 green bell pepper, finely chopped
1/4 yellow bell pepper, finely chopped
1/4 red bell pepper, finely chopped
2 stalks celery, finely chopped
2 garlic cloves, finely chopped
For the Dipping Sauce:
2 tablespoons ketchup
2 tablespoons fresh lime juice
1 tablespoon mayonnaise
1 teaspoon Tabasco sauce (or Pickapeppa Sauce)
Pinch of salt
Fresh ground black pepper, to taste
Instructions
Prepare the Batter:
In a mixing bowl, combine the flour, egg, and milk. Mix until smooth.
Season the batter with cayenne pepper, red pepper flakes, seasoning salt, and a pinch of regular salt if needed.
Stir in ground black pepper to taste.
Mix in the Vegetables and Conch:
Add the chopped conch, onion, green, yellow, and red bell peppers, celery, and garlic to the batter.
Fold everything together until the ingredients are evenly distributed.
Heat the Oil:
Heat the oil in a deep pot or fryer to 350°F (175°C).
Fry the Fritters:
Using a spoon or small scoop, carefully drop spoonfuls of the batter into the hot oil.
Fry in batches, ensuring not to overcrowd the pot, for 3-5 minutes or until the fritters are golden brown and crispy.
Remove the fritters using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Prepare the Dipping Sauce:
In a small bowl, whisk together the ketchup, lime juice, mayonnaise, Tabasco or Pickapeppa sauce, salt, and black pepper until smooth.
Serve:
Serve the conch fritters hot with the dipping sauce on the side.
