Baked Apple Fritters
Ingredients:
For the Fritters:
2 cups all-purpose flour
¼ cup granulated sugar
2 tsp baking powder
½ tsp salt
1 tsp ground cinnamon
¼ tsp ground nutmeg
¼ cup unsalted butter, melted
¾ cup milk
1 large egg
1 ½ cups apples, peeled, cored, and diced (about 1 medium apple)
Optional: ½ cup raisins or chopped nuts for extra texture
For the Glaze:
1 cup powdered sugar
2-3 tbsp milk (or more, as needed)
½ tsp vanilla extract
Optional: ¼ tsp ground cinnamon for extra flavor
Instructions:
1. Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
2. Prepare the Fritter Batter:
In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, mix the melted butter, milk, and egg until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be thick.
Fold in the diced apples and optional raisins or nuts.
3. Shape and Bake:
Spoon the batter into the muffin tin, filling each cup about ¾ full.
Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean and the fritters are golden brown.
4. Prepare the Glaze:
While the fritters are baking, whisk together the powdered sugar, milk, vanilla extract, and optional cinnamon in a small bowl until smooth. Adjust the consistency with more milk if necessary.
5. Glaze the Fritters:
Allow the fritters to cool slightly before glazing. Drizzle or spoon the glaze over the top of each fritter.
6. Serve:
Enjoy the fritters warm or at room temperature. They’re delightful on their own or with a cup of coffee or tea.
